Your aren't the only one who has been pestering me for more food details, so I promise to dedicate a post to that in the next day or two. As for the foie gras, I rue the day my siblings convinced me to try it at Lucerne, in Vegas. I wish I didn't know just how delicious it was, because once I heard about the force-feeding, my conscience wouldn't let me eat it. I gave into temptation on this once-in-a-lifetime trip, but I'm actually quite glad that it's not readily available in the Hill Country!

I don't think "we" have any farmer that is force-feeding geese in order to harvest their liver....but one never knows!
Perhaps a new artisan enterprise out here in the hills??
Your description of beef cheeks over foie gras was tantalizing.
Pleeeeeze give more verbal description.......what kind of sauce.....were the "cheeks" lightly sauteed? How was the liver prepared?
What wine did y'all drink with that meal ("that made your eyes roll up"????)
